The 1st Shop of Coffee Prince (커피프린스 1호점, or Coffee Prince) is a South Korean drama that aired on July 2, 2007 in South Korea. It aired every Monday and Tuesday. It stars popular actress Yoon Eun Hye from Goong or Princess Hours, Gong Yoo from One Fine Day, Lee Sun Gyun from White Tower and Chae Jung Ahn. The drama contains vaguely homosexual elements, although these are disputable given the theme of the plot.

Due to the show's popularity, MBC had announced extension of the show by one episode. MBC also aired a special on August 28, 2007. Gong Yoo watched the special with 1000 fans from all over Asia.

Synopsis
Choi Han Kyul, played by Gong Yoo, is the cocky son of a rich family who runs a food corporation. He doesn't believe in love and certainly doesn't want to get married despite his family's requests. On the other hand, Go Eun Chan, played by Yoon Eun Hye, is a 24-year old tomboyish female who gets mistaken as a guy quite often. She takes up every job possible - waitress, food deliverer, etc - and has the responsibility of taking care of her mother and younger sister. Eun Chan accidentally meets Han Kyul twice, once on a delivery and once during a robbery. During the robbery, Eun Chan's delivery motorcycle ends up being damaged. Han Kyul, not knowing that Eun Chan is actually a girl, decides to hire Eun Chan as a false "lover" so that he can escape the blind dates arranged by his grandmother. Meanwhile, Han Kyul's cousin, Choi Han Seong, is an established music producer and his ex-girlfriend Han Yoo Joo, who Han Kyul secretly loved for nine years, is a famous artist who studied in New York. The two were lovers for about 8 years but their relationship ended when Yoo Joo broke up with Han Seong. Two years after they separated their paths cross again when Yoo Joo returns to Seoul.

After getting an ultimatum from his grandmother, Han Kyul takes over a run-down old coffee shop, later renamed Coffee Prince, to prove his ability, both to his grandmother and Yoo Joo. In order to attract female customers, he only hires good looking male employees. In a struggle with money, Eun Chan, whom Han Kyul has already mistaken as a boy, hides her gender identity to get a job at Coffee Prince. Soon feelings start to spark between Eun Chan and Han Kyul. Because he's unaware that Eun Chan is a girl, Han Kyul starts to question his sexuality.

Book Information
With the death of her father, Eun Chan has to support her family, consisting of a foolish, spendthrift mother and younger sister. Due to her short hair, baggy clothing and general boyish behavior, she often gets mistaken for a boy and her sister often uses her as her 'boyfriend' to get rid of boys who follow her around. Eun Chan is also proficient at Taekwondo, and is strong for a girl.

Han Kyul is the heir of a large company. He's rich, carefree and doesn't take life seriously enough. He first meets Eun Chan when one of her sister's boyfriends attempts to steal a handbag belonging to Yoo Joo (a woman that Han Kyul secretly likes). Eun Chan, not knowing who the boy is, catches him but lets him go when she realizes who it is. This gives Han Kyul the impression that the two have been planning the incident together, and when she comes the day after to collect money to fix her scooter, he insults her by telling her that he thinks she's just a thief. All this time, he thinks that Eun Chan is male.

After being forced by his grandmother to take on a coffee shop (that is to become Coffee Prince) and improve its sales, Han Kyul goes for a 'prince' concept and tries to hire good-looking boys as servers to attract female customers. Eun Chan is employed, and as she works at Coffee Prince, she falls in love with Han Kyul. Han Kyul too feels affection for Eun Chan, but not knowing that Eun Chan is actually a girl, this leads him to confusion about his sexuality and he tries to distance himself from her.

Although the drama version is very similar, there is nothing in the book about Eun Chan being employed as a 'false lover' to get Han Kyul out of blind dates or Eun Chan going abroad to become a barista.

Awards and Nominations
Although the drama managed to win some awards at the 2007 MBC Acting Awards, if it were not for Tae Wang Sa Sin Gi, another blockbuster drama of 2007, it could have won more awards such as Best Couple Award for Yoon Eun Hye and Gong Yoo and Best Drama of 2007.

Coffee contains several compounds which are known to affect human body chemistry. The coffee bean itself contains chemicals which are psychotropic (in a way some find pleasing) for humans as a by-product of their defense mechanism. These chemicals are toxic in large doses, or even in their normal amount when consumed by many creatures which may otherwise have threatened the beans in the wild.

Coffee as a stimulant

Coffee contains caffeine, which acts as a stimulant. For this reason, it is often consumed in the morning and during working hours. Students preparing for examinations with late-night "cram sessions" or "code jams" frequently use coffee to keep themselves awake. Many office workers take a "coffee break" when their energy is diminished.

Recent research has uncovered additional stimulating effects of coffee which are not related to its caffeine content. Coffee contains an as yet unknown chemical agent which stimulates the production of cortisone and adrenaline, two stimulating hormones.

For occasions when one wants to enjoy the flavor of coffee with almost no stimulation, decaffeinated coffee (also called decaf) is available. This is coffee from which most of the caffeine has been removed, by the Swiss water process (which involves the soaking of raw beans to absorb the caffeine) or the use of a chemical solvent such as trichloroethylene ("tri"), or the more popular methylene chloride, in a similar process. Another solvent used is ethyl acetate; the resultant decaffeinated coffee is marketed as "natural decaf" because ethyl acetate is naturally present in fruit. Extraction with supercritical carbon dioxide has also been employed.

Decaffeinated coffee usually loses some flavor over normal coffees and tends to be more bitter. There are also coffee alternatives that resemble coffee in taste but contain no caffeine (see below). These are available both in ground form for brewing and in instant form.

Benefits
Reduced risk of Alzheimer's disease

Several studies comparing moderate coffee drinkers (about 2 cups a day) with light coffee drinkers (less than one cup a day) found that those who drank more coffee were significantly less likely to develop Alzheimer's disease later in life.

Reduced risk of gallstone disease

Drinking caffeinated coffee has been correlated with a lower incidence of gallstones and gallbladder disease in both men and women in two studies performed by the Harvard School of Public Health. A lessened risk was not seen in those who drank decaffeinated coffee.

Reduced risk of Parkinson's disease

A study comparing heavy coffee drinkers (3.5 cups a day) with non-drinkers found that the coffee drinkers were significantly less likely to contract Parkinson's Disease later in life. Likewise, a second study found an inverse relationship between the amount of coffee regularly drunk and the likelihood of developing Parkinson's Disease.

Cognitive performance

Many people drink coffee for its ability to increase short term recall and increase IQ.

Likewise, in tests of simple reaction time, choice reaction time, incidental verbal memory, and visuospatial reasoning, participants who regularly drank coffee were found to perform better on all tests, with a positive relationship between test scores and the amount of coffee regularly drunk. Elderly participants were found to have the largest effect associated with regular coffee drinking. Another study found that women over the age of 80 performed significantly better on cognitive tests if they had regularly drunk coffee over their lifetimes.

Analgesic enhancement

Coffee contains caffeine, which increases the effectiveness of pain killers, especially migraine and headache medications. For this reason, many over-the-counter headache drugs include caffeine in their formula.

Antidiabetic

Coffee intake may reduce one's risk of diabetes mellitus type 2 by up to half. While this was originally noticed in patients who consumed high amounts (7 cups a day), the relationship was later shown to be linear.

Liver disease

Coffee can also reduce the incidence of cirrhosis of the liver and has been linked to a reduced risk of hepatocellular carcinoma, a primary liver cancer that usually arises in patients with preexisting cirrhosis. The exact mechanism and the amount of coffee needed to achieve a beneficial effect are as yet unclear.

Cancer

Coffee consumption is also correlated to a reduced risk of oral, esophageal, and pharyngeal cancer. In ovarian cancer, no benefit was found. In the Nurses Health Study, a modest reduction in breast cancer was observed in postmenopausal women only, which was not confirmed in decaffeinated coffee.

Cardioprotective

Coffee reduces the incidence of heart disease, though whether this is simply because it rids the blood of excess lipids or because of its stimulant effect is unknown.

Laxative/diuretic

Coffee is also a powerful stimulant for peristalsis and is sometimes considered to prevent constipation; it is also a diuretic. However, coffee can also cause loose bowel movements.

Practitioners in alternative medicine often recommend coffee enemas for "cleansing of the colon" due to its stimulus of peristalsis, although mainstream medicine has not proved any benefits of the practice.

Antioxidant

Coffee contains the anticancer compound methylpyridinium. This compound is not present in significant amounts in other food materials. Methylpyridinium is not present in raw coffee beans but is formed during the roasting process from trigonelline, which is common in raw coffee beans. It is present in both caffeinated and decaffeinated coffee, and even in instant coffee.

Prevention of dental caries

The tannins in coffee may reduce the cariogenic potential of foods. In vitro experiments have shown that these polyphenolic compounds may interfere with glucosyltransferase activity of mutans streptococci, which may reduce plaque formation. In rat experiments, tea polyphenols reduced caries.

Gout

Coffee consumption decreased risk of gout in men over age 40. In a large study of over 45,000 men over a 12-year period, the risk for developing gout in men over 40 was inversely proportional with the amount of coffee consumed.

Risks

Many notable effects of coffee are related to its caffeine content. Amongst other known negative health associations it is not clear whether these are due to the caffeine or other unidentified compounds (suggesting that these may be modified by switching to decaffeinated coffee).

Anxiety and sleep changes

Many coffee drinkers are familiar with "coffee jitters", a nervous condition that occurs when one has had too much caffeine. It can also cause anxiety and irritability, in some with excessive coffee consumption, and some as a withdrawal symptom. Coffee can also cause insomnia in some, while paradoxically it helps some sleep more soundly.

Cholesterol

Coffee brewed using a French press method contains oils (cafestol and kahweol) otherwise trapped by more commonly used paper filters. In two short-term studies, these oils are thought to have raised LDL cholesterol levels by 10 percent. The risk is not present in paper filtered coffee.

Blood pressure

Caffeine has previously been implicated in increasing the risk of high blood pressure; however, recent studies have not confirmed any association. In a 12-year study of 155,000 female nurses, large amounts of coffee did not induce a "risky rise in blood pressure".. Previous studies had already shown statistically insignificant associations between coffee drinking and clinical hypertension. Effect of coffee on morbidity and mortality due to its effect on blood pressure is too weak, and has not been studied. Other positive and negative effects of coffee on health would be difficult confounding factors.

Effects on pregnancy and menopause

A February 2003 Danish study of 18,478 women linked heavy coffee consumption during pregnancy to significantly increased risk of stillbirths (but no significantly increased risk of infant death in the first year). "The results seem to indicate a threshold effect around four to seven cups per day," the study reported. Those who drank eight or more cups a day (64 U.S. fl oz or 1.89 L) were at 220% increased risk compared with nondrinkers. This study has not yet been repeated, but has caused some doctors to caution against excessive coffee consumption during pregnancy.

There are also gender-specific effects: in some PMS sufferers it increases the symptoms; it can reduce fertility in women; it may increase the risk of osteoporosis in postmenopausal women; and there may be risks to a fetus if a pregnant woman drinks 8 or more cups a day (64 U.S. fl oz or 1.4 L or more).

Decaffeinated coffee is occasionally regarded as a potential health risk to pregnant women, due to the high incidence of chemical solvents used to extract the caffeine. These concerns have almost no basis, however, as the solvents in question evaporate at 80–90 °C, and coffee beans are decaffeinated before roasting, which occurs at approximately 200 °C. As such, these chemicals, namely trichloroethane and methylene chloride, are present in trace amounts at most, and neither pose a significant threat to unborn children.

Coronary artery disease

A 2004 study tried to discover why the beneficial and detrimental effects of coffee conflict. The study concluded that consumption of coffee is associated with significant elevations in biochemical markers of inflammation. This is a detrimental effect of coffee on the cardiovascular system, which may explain why coffee has so far only been shown to help the heart at levels of four cups (24 fl oz or 600 mL) or fewer per day.

The health risks of decaffeinated coffee have been studied, with varying results. One variable is the type of decaffeination process used; while some involve the use of organic solvents which may leave residual traces, others rely on steam.

A study has shown that cafestol, a substance which is present in boiled coffee drinks, dramatically increases cholesterol levels, especially in women. Filtered coffee contains only trace amounts of cafestol.

Polymorphisms in the CYP1A2 gene may lead to a slower metabolism of caffeine. In patients with a slow version of the enzyme the risk for myocardial infarction (heart attack) is increased by a third (2-3 cups) to two thirds (>4 cups). The risk was more marked in people under the age of 59.

A Harvard study over 20 years of 128,000 people published in 2006 concluded that there was no evidence to support the claim that coffee consumption itself increases the risk of coronary heart disease. The study did, however, show a correlation between heavy consumption of coffee and higher degrees of exposure to other coronary heart disease risk factors such as smoking, greater alcohol consumption, and lack of physical exercise.The results apply only to coffee filtered through paper filters, which excludes boiled coffee and espresso, for example. Additionally, the lead researcher on this study acknowledged that subsets of the larger group may be at risk for heart attack when drinking multiple cups of coffee a day due to genetic differences in metabolizing caffeine.

The Iowa Women's Health Study showed that women who consumed coffee actually had fewer cardiovascular disease incidents and lower cancer rates than the general population. For women who drank 6 or more cups, the benefit was even greater. However, this study excluded 35% of its original participants who already had cardiovascular disease and other chronic diseases when the study began. Since participants were all over the age of 55, no good conclusion can be drawn about the long term effect of coffee drinking on heart disease from this study.

A coffeemaker is a kitchen appliance used to brew coffee without having to boil water in a separate container. While there are many different types of coffeemaker using a number of different brewing principles, in the most common devices, coffee grounds are placed in a paper or metal filter inside a funnel, which is set over a glass or ceramic coffee pot. Cold water is poured into a separate chamber, which is then heated up to the boiling point, and directed into the funnel. This is also called automatic drip-brew.

Brewing coffee through the ages
Making a cup of coffee is a deceptively simple process. Simply take roasted and ground coffee beans, add hot water, and consume the infusion. Throughout the 19th and even the early 20th centuries, it was considered adequate to add ground coffee to hot water in a saucepan, boil it until it smelled right, and pour the brew into a cup.

The first modern method for making coffee—drip brewing—is more than 125 years old, and its design had changed little. The "Biggin", originating in France ca. 1800, was a two-level pot holding coffee in an upper compartment into which water was poured, to drain through holes in the bottom of the compartment into the coffee pot below. Around the same time, the French developed the "pumping percolator", in which boiling water in a bottom chamber forces itself up a tube and then trickles (percolates) through the ground coffee back into the bottom chamber.

Vacuum brewers

Other coffee brewing devices became popular throughout the nineteenth century, including various machines using applications of the vacuum principle. The Napier Vacuum Machine, invented in 1840, was an early example of this type. While generally excessively complex for everyday use, vacuum devices were prized for producing a clear brew, and were actually quite popular up until the middle of the twentieth century.

The principle of a vacuum brewer was to heat water in a lower vessel until expansion forced the contents through a narrow tube into an upper vessel containing ground coffee. When the lower vessel was empty and sufficient brewing time had elapsed, the heat was removed and the resulting vacuum would draw the brewed coffee back through a strainer into the lower chamber, from which it could be decanted. The Bauhaus interpretation of this device can be seen in Gerhard Marcks’ Sintrax coffee maker of 1925.

An early variant technique, called a balance siphon, was to have the two chambers arranged side-by-side on a sort of scale-like device, with a counterweight attached opposite the initial (or heating) chamber. Once the near-boiling water was forced from the heating chamber into the brewing one, the counterweight was activated, causing a spring-loaded snuffer to come down over the flame, thus turning "off" the heat, and allowing the cooled water to return to the original chamber. In this way, a sort of primitive automatic brewing method was achieved.

Percolators

Percolators began to be developed from the mid-nineteenth century, with James Nason patenting a version in Massachusetts in 1865. In both Biggin and percolator devices, however, similar functional requirements are central: gravity or pressure is used to move water into contact with coffee for a sufficient amount of time to infuse an acceptable amount of flavor, and then those same forces act to remove the brewed coffee from the grounds, which to the greatest extent possible, are kept separate from the finished product. Domestic electrification simplified the operation of percolators and vacuum systems and made them ubiquitous in American homes. A critical element in the success of the electric coffee maker was the creation of safe and secure fuses and heating elements. In an article in House Furnishing Review, May 1915, Lewis Stephenson of Landers, Frary and Clark described a modular safety plug being used in his company’s Universal appliances, and the advent of numerous patents and innovations in temperature control and circuit breakers provided for the success of many new percolator and vacuum models. Notable new models included Farberware’s Coffee Robot (introduced in 1937), the Knapp-Monarch Therm-a-Magic (1931), and the very popular Sunbeam Coffeemaster introduced in 1940. Sunbeam was one of the first manufacturers to move away from the all-glass construction (prized for maintaining purity of flavor), to nickel-plated copper.

Design considerations in coffeemakers

While coffee percolators in particular were seemingly locked into an extremely traditional design vocabulary, vacuum coffee makers were able to have a more diverse expression, since the colonial coffee pot was not a practical form for this type of device, which required two fully separate chambers joined in an hourglass configuration. Interest in this method revived around 1914–1916 with the increasing popularity of the "Silex" brand, based on models developed by Massachusetts housewives Ann Bridges and Mrs. Sutton. Their use of Pyrex solved the problem of fragility and breakability that had made this type of machine commercially unattractive. The popularity of glass and Pyrex globes was reinforced during the Second World War, since aluminum, chrome, and other metals used in traditional percolators became restricted in availability. The sleek and simple forms attracted positive attention from design critics influenced by functionalism of the Bauhaus, and the exigencies of wartime design. Science’s influence as a motif in post-war design was felt in the manufacture and marketing of coffee and coffee-makers. Consumer guides emphasized the ability of the device to meet standards of temperature and brewing time, and the ratio of soluble elements between brew and grounds. The industrial chemist Peter Schlumbohm expressed the scientific motif most purely in his "Chemex" coffeemaker, which from its initial marketing in the early 1940s used the authority of science a sales tool, describing the product as "the Chemist’s way of making coffee", and discussing at length the quality of its product in the language of the laboratory: “the funnel of the CHEMEX creates ideal hydrostatic conditions for the unique...Chemex extraction.” Schlumbohm’s unique brewer, a single Pyrex vessel shaped to hold a proprietary filter cone, resembled nothing more than a piece of laboratory equipment, and became wildly popular in the technology-obsessed 1950s household.

Drip coffeemakers

A drip coffee maker can also be referred to as a dripolator. A number of different machines used to automate these methods were around until the mid-20th century. In 1972, the first automatic drip-brew coffeemaker for home use, Mr. Coffee, was introduced (Bunn had come out with an automatic drip-brew machine for commercial use in 1963). It combined aspects of both the drip-brew process and the percolating process with the added feature of heating up the water using an electric element in a separate chamber. Since that time, the number, style, and size of these appliances have increased dramatically.

A flat white is a coffee beverage served in Australia and New Zealand, prepared with espresso and milk. The drink is generally made with an espresso (1/3rd of the cup) and topped with steamed milk (2/3rds of the cup). The volumised milk is prepared by folding the top layer into the lower layers .

A flat white is the same as a properly made North American Cafe Latte, but differs from a Starbucks style latte in the preparation of the milk. Australian lattes and flat whites are usually served in 215-240ml cups, making them stronger than some lattes in other countries.

Espresso con panna

Espresso con panna, which means "espresso with cream" in Italian, is a single or double shot of espresso topped with whipped cream. In the US it may also be called café Vienne and in the UK café Viennois.

In Vienna the term Wiener Melange properly refers to a different drink, made with foamed milk rather than whipped cream. An espresso con panna is properly called a Franziskaner, but ordering a Wiener Melange will often yield the arrival this drink even in Vienna.

In France café Viennois refers to both an espresso con panna and a Wiener Melange.

Historically served in a demitasse cup, it is perhaps a more old fashioned drink than a latte or cappuccino, though still very popular, whichever name it receives, at Coffeehouses in Budapest and Vienna.

Doppio Coffee

Cuban espresso

Cuban coffee (café cubano, cuban espresso, cafecito, cuban pull, cuban shot) is a type of espresso which originated in Cuba after espresso machines were first imported there from Italy. Specifically, it refers to an espresso shot which is sweetened with sugar while it is being brewed, but the name covers other drinks which use Cuban espresso as their base. Drinking café cubano remains a prominent social and cultural activity within Cuba as well as the expatriate community.

Cortado Coffee

A cortado is an espresso "cut" (from the Spanish and Portuguese cortar) with a small amount of warm milk to reduce the acidity. The ratio of milk to coffe is between 1:1 - 1:2, and the milk is added after the espresso. The steamed milk hasn't much foam, but many baristas make some micro foam to make latte art. It is popular in Spain and Portugal, as well as throughout Latin America, where it is drunk in the afternoon. In Cuba, it is known as a cortadito, and in Catalan it's called a tallat. It's usually served in a special glass, often with a metal ring base and a metal wire handle. There are several variations, including cortado condensada (espresso with condensed milk) and leche y leche (with condensed milk and cream on top).

However a cortado is made, it is important to distinguish it from the Italian caffe macchiato, which is an espresso with a small amount of foam/steamed milk added. The cortado should always be served in a 150–200 ml (5–7 fl oz) glass and the milk should only be steamed; maybe a little foam settles to the top but the essence of the drink must be steamed milk. Distinguished from American variation of cafe au lait, which is a regular coffee base and warm milk, cortado is made with espresso and steamed milk.

Caffè corretto

Caffè corretto, an Italian beverage, consists of a shot of espresso "corrected" with a shot of liquor, usually grappa, brandy or sambuca. It is also known (outside of Italy) as an "espresso corretto". It is widely consumed in Italy and usually taken after lunch or dinner. It is ordered as "un caffè corretto grappa", "[…] corretto cognac" or "[…] corretto sambuca", depending on the liquor the customer would like to have added to the coffee.

In Spain, a similar drink is known as "carajillo".

Cappuccino Coffee

Cappuccino is an Italian coffee-based drink prepared with espresso, hot milk, and milk foam. A cappuccino differs from a caffé latte in that it is prepared with much less steamed or textured milk than the caffé latte with the total of espresso and milk/foam making up between approximately 150 ml and 180 ml (5 and 6 ounces). A cappuccino is traditionally served in a porcelain cup, which has far better heat retention characteristics than glass or paper. The foam on top of the cappuccino acts as an insulator and helps retain the heat of the liquid, allowing it to stay hotter longer.

Red eye

Red eye, black eye and dead eye are variants of fortified coffee drinks in which espresso is combined with normal drip coffee.

A red eye is a cup of filter coffee to which one shot of espresso has been added. Variations of the red eye based on the number of espresso shots include the black eye, which is made with two shots of espresso; and the dead eye, which is made with three shots of espresso (also known as a "bull's eye" in some areas).

Name

The red eye has many monikers, depending on the region.

* In parts of the South and Colorado, the drink is called a "shot in the dark" or "shotgun."
* It is also known as a "sledgehammer" or "hammerhead," particularly in California ("sledgehammer" particularly in the San Francisco Bay Area).
* In Alaska, it is known as a "sludge cup," possibly in reference to the state's large petroleum industry (see oil sludge).
* It also has countless unique trade names coined by individual coffeeshops, particularly in areas where coffee jargon is less well-known.
o Dunkin' Donuts "Turbo" is made with a blend of Dunkin' Donuts drip coffee and espresso, served hot or iced.
o Sonic Drive-In, which introduced espresso-based drinks to its menu in late 2007, lists the option to add espresso to drip coffee as its "Sonic Boom".
* In Western New York Starbucks, three shots is called a "blue eye," and four shots is reported as a "purple eye."

While they both contain espresso, a red eye should not be confused with an americano or long black, which are made with hot water rather than drip coffee, and thus not considered fortified.

Cafe Americano

Café Américano or simply Americano (the name is also spelled with varying capitalization and use of diacritics: e.g. café Americano, cafe americano, etc.) is a style of coffee prepared by adding espresso to hot water, giving a similar strength but different flavor than regular drip coffee (the strength of an americano can vary depending on the number of shots of espresso added). Like espresso, americano tends to be an acquired taste, and many drinkers prefer it black and unsweetened to fully appreciate the taste of the coffee.

A variation of the beverage is the iced americano. Instead of hot water, the espresso is combined with cold water.

Affogato Coffee

An affogato (Italian, "drowned") is a coffee-based beverage or dessert. "Affogato style", which refers to the act of topping a drink or dessert with espresso, may also incorporate caramel sauce or chocolate sauce.

A "cafe affogato" is sometimes referred to as a "cold shower".

An "affogato di gelato" is usually vanilla bean gelato topped with espresso. Alternately, a bitter chocolate gelato (cioccolato) is an ideal match to espresso.

Espresso Coffee

Espresso or caffè espresso (also: expresso) is a concentrated coffee beverage brewed by forcing very hot (but not boiling) water under high pressure through coffee that has been ground to a consistency between extremely fine and powder.

Espresso was developed in Milan, Italy in the early 20th century, but up until the mid-1940s it was a beverage produced solely with steam pressure. The invention of the spring piston lever machine and its subsequent commercial success changed espresso into the beverage we know today. Espresso is now produced with 0.82-1.8 MPas (8.2-18 atm; 120-265 PSI) of pressure.

The defining characteristics of espresso include a thicker consistency than drip coffee, a higher amount of dissolved solids than drip coffee per relative volume, and a serving size that is usually measured in shots, which are between 25 and 30 ml (around 1 fluid ounce) in size. Espresso is chemically complex and volatile, with many of its chemical components quickly degrading from oxidation or loss of temperature. The most distinguishing characteristic is "crema," a reddish-brown foam that floats on the surface and is composed of vegetable oils, proteins and sugars. Crema has elements of both emulsion and foam colloid.

As a result of the high-pressure brewing process, all of the flavors and chemicals in a typical cup of coffee are concentrated. For this reason, espresso lends itself to becoming the base for other drinks, such as lattes, cappuccini, macchiato and mochas.

Despite some confusion, on a per-volume basis, espresso contains approximately three times the caffeine content of regular brewed coffee (1.700 g/l (50 mg per fluid ounce) of espresso versus 0.50-0.75 g/l (14-22 mg per ounce) for brewed coffee). Compared on the basis of usual serving sizes, a 30 ml (1 fluid ounce) shot of espresso has about half the caffeine of a standard 180 ml (6 fluid ounce) cup of American-style coffee, which varies from 80 to 130 mg.

Coffee is a widely-consumed stimulant beverage prepared from roasted seeds, commonly called coffee beans, of the coffee plant. Coffee was first consumed in the 9th century, when it was discovered in the highlands of Ethiopia. From there, it spread to Egypt and Yemen, and by the 15th century had reached Armenia, Persia, Turkey, and northern Africa. From the Muslim world, coffee spread to Italy, then to the rest of Europe and the Americas. Today, coffee is one of the most popular beverages worldwide.

Coffee berries, which contain the coffee bean, are produced by several species of small evergreen bush of the genus Coffea. The two most commonly grown species are Coffea canephora (also known as Coffea robusta) and Coffea arabica. These are cultivated in Latin America, Southeast Asia, and Africa. Once ripe, coffee berries are picked, processed, and dried. The seeds are then roasted, undergoing several physical and chemical changes. They are roasted to varying degrees, depending on the desired flavor. They are then ground and brewed to create coffee. Coffee can be prepared and presented by a variety of methods.

Coffee has played an important role in many societies throughout modern history. In Africa and Yemen, it was used in religious ceremonies. As a result, the Ethiopian Church banned its consumption until the reign of Emperor Menelik II of Ethiopia.It was banned in Ottoman Turkey in the 17th century for political reasons, and was associated with rebellious political activities in Europe.

Coffee is an important export commodity. In 2004, coffee was the top agricultural export for 12 countries,and in 2005, it was the world's seventh largest legal agricultural export by value.

Some controversy is associated with coffee cultivation and its impact on the environment. Many studies have examined the relationship between coffee consumption and certain medical conditions; whether the effects of coffee are positive or negative is still disputed.

Etymology

The English word coffee first came to be used in the early- to mid-1600s, but early forms of the word date to the last decade of the 1500s.It comes from the Italian caffè. The term was introduced to Europe via the Ottoman Turkish kahveh which is in turn derived from the Arabic: قهوة‎, qahweh.The origin of the Arabic term is uncertain; it is either derived from the name of the Kaffa region in western Ethiopia, where coffee was cultivated, or by a truncation of qahwat al-būnn, meaning "wine of the bean" in Arabic. In Eritrea, "būnn" (also meaning "wine of the bean" in Tigrinya) is used.The Amharic and Afan Oromo name for coffee is bunna.

History

Coffee use can be traced at least to as early as the 9th century, when it appeared in the highlands of Ethiopia. According to legend, Ethiopian shepherds were the first to observe the influence of the caffeine in coffee beans when the goats appeared to "dance" and to have an increased level of energy after consuming wild coffee berries. The legend names the shepherd "Kaldi." From Ethiopia, coffee spread to Egypt and Yemen. It was in Arabia that coffee beans were first roasted and brewed similarly as they are today. By the 15th century, it had reached the rest of the Middle East, Persia, Turkey, and northern Africa.

In 1583, Leonhard Rauwolf, a German physician, gave this description of coffee after returning from a ten year trip to the Near East:
“ A beverage as black as ink, useful against numerous illnesses, particularly those of the stomach. Its consumers take it in the morning, quite frankly, in a porcelain cup that is passed around and from which each one drinks a cupful. It is composed of water and the fruit from a bush called bunnu. ”

From the Muslim world, coffee spread to Italy. The thriving trade between Venice and North Africa, Egypt, and the Middle East brought many goods, including coffee, to the Venetian port. From Venice, it was introduced to the rest of Europe. Coffee became more widely accepted after it was deemed a Christian beverage by Pope Clement VIII in 1600, despite appeals to ban the "Muslim drink". The first European coffee house opened in Italy in 1645. The Dutch were the first to import coffee on a large scale, and they were among the first to defy the Arab prohibition on the exportation of plants or unroasted seeds when Pieter van den Broeck smuggled seedlings from Aden into Europe in 1616. The Dutch later grew the crop in Java and Ceylon. Through the efforts of the British East India Company, coffee became popular in England as well. It was introduced in France in 1657, and in Austria and Poland after the 1683 Battle of Vienna, when coffee was captured from supplies of the defeated Turks.

When coffee reached North America during the colonial period, it was initially not as successful as it had been in Europe. During the Revolutionary War, however, the demand for coffee increased so much that dealers had to hoard their scarce supplies and raise prices dramatically; this was partly due to the reduced availability of tea from British merchants. After the War of 1812, during which Britain temporarily cut off access to tea imports, the Americans' taste for coffee grew, and high demand during the American Civil War together with advances in brewing technology secured the position of coffee as an everyday commodity in the United States.

Noted as one of the world’s largest, most lawfully valuable traded commodities after oil, coffee has become a vital cash crop for many Third World countries. Over one hundred million people in developing countries have become dependent on coffee as the primary source of income (Ponte 1). Coffee has become the primary export and backbone for African countries like Uganda, Burundi, Rwanda, and Ethiopia as well as other Central American countries.

Biology

The Coffea plant is native to subtropical Africa and southern Asia.It belongs to a genus of 10 species of flowering plants of the family Rubiaceae. It is an evergreen shrub or small tree that may grow 5 meters (16 ft) tall when unpruned. The leaves are dark green and glossy, usually 10–15 centimeters (3.9–5.9 in) long and 6.0 centimeters (2.4 in) wide. It produces clusters of fragrant, white flowers that bloom simultaneously. The fruit berry is oval, about 1.5 centimeters (0.6 in) long,and green when immature, but ripens to yellow, then crimson, becoming black on drying. Each berry usually contains two seeds, but from 5 to 10 percent of the berries have only one; these are called peaberries. Berries ripen in seven to nine months.

Cultivation

Coffee is usually propagated by seeds. The traditional method of planting coffee is to put 20 seeds in each hole at the beginning of the rainy season; half are eliminated naturally. Coffee is often intercropped with food crops, such as corn, beans, or rice, during the first few years of cultivation.

The two main cultivated species of the coffee plant are Coffea canephora and Coffea arabica. Arabica coffee (from C. arabica) is considered more suitable for drinking than robusta coffee (from C. canephora); robusta tends to be bitter and have less flavor than arabica. For this reason, about three-fourths of coffee cultivated worldwide is C. arabica.However, C. canephora is less susceptible to disease than C. arabica and can be cultivated in environments where C. arabica will not thrive. Robusta coffee also contains about 40–50 percent more caffeine than arabica. For this reason, it is used as an inexpensive substitute for arabica in many commercial coffee blends. Good quality robustas are used in some espresso blends to provide a better foam head and to lower the ingredient cost. Other cultivated species include Coffea liberica and Coffea esliaca, believed to be indigenous to Liberia and southern Sudan, respectively.

Most arabica coffee beans originate from either Latin America, eastern Africa, Arabia, or Asia. Robusta coffee beans are grown in western and central Africa, throughout southeast Asia, and to some extent in Brazil.Beans from different countries or regions usually have distinctive characteristics such as flavor, aroma, body, and acidity.These taste characteristics are dependent not only on the coffee's growing region, but also on genetic subspecies (varietals) and processing.Varietals are generally known by the region in which they are grown, such as Colombian, Java, or Kona.

Ecological effects

Originally, coffee farming was done in the shade of trees, which provided habitat for many animals and insects.This method is commonly referred to as the traditional shaded method. Many farmers (but not all) have decided to modernize their production methods and switch to a method where farmers would now use sun cultivation, in which coffee is grown in rows under full sun with little or no forest canopy. This causes berries to ripen more rapidly and bushes to produce higher yields but requires the clearing of trees and increased use of fertilizer and pesticides.Traditional coffee production, in the other hand, caused berries to ripen more slowly and it produced lower yields compared to the modernized method but the quality of the coffee is allegedly superior. In addition, the traditional shaded method is environmentally friendly and serves as a habitat for many species. Opponents of sun cultivation say environmental problems such as deforestation, pesticide pollution, habitat destruction, and soil and water degradation are the side effects of these practices. The American Birding Association has led a campaign for "shade-grown" and organic coffees, which it says are sustainably harvested.However, while certain types of shaded coffee cultivation systems show greater biodiversity than full-sun systems, they still compare poorly to native forest in terms of habitat value.

Economics

Brazil remains the largest coffee exporting nation, but in recent years Vietnam has become a major producer of robusta beans.Colombia is the third exporter and the largest producer of washed arabica coffee. Robusta coffees, traded in London at much lower prices than New York's arabica, are preferred by large industrial clients, such as multinational roasters and instant coffee producers, because of the lower cost. Four single roaster companies buy more than 50 percent of all of the annual production: Kraft, Nestlé, Procter & Gamble, and Sara Lee.The preference of the "Big Four" coffee companies for cheap robusta is believed by many to have been a major contributing factor to the crash in coffee prices, and the demand for high-quality arabica beans is only slowly recovering. Many experts believe the giant influx of cheap green coffee after the collapse of the International Coffee Agreement of 1975–1989 led to the prolonged price crisis from 1989 to 2004. In 1997 the price of coffee in New York broke US$3.00/lb, but by late 2001 it had fallen to US$0.43/lb.[36] In 2007, wholesale coffee was about US$1/lb (e.g. 69 cents in London in March to 134 cents in New York in October), with robusta being about 70% of the price of arabica. Retail prices varied from an average of $3 in Poland to $3.50 in the US to $17 in the UK.

The concept of fair trade labeling, which guarantees coffee growers a negotiated pre-harvest price, began with the Max Havelaar Foundation's labelling program in the Netherlands. In 2004, 24,222 metric tons out of 7,050,000 produced worldwide were fair trade; in 2005, 33,991 metric tons out of 6,685,000 were fair trade, an increase from 0.34 percent to 0.51 percent.A number of studies have shown that fair trade coffee has a positive impact on the communities that grow it. A study in 2002 found that fair trade strengthened producer organizations, improved returns to small producers, and positively affected their quality of life.A 2003 study concluded that fair trade has "greatly improved the well-being of small-scale coffee farmers and their families" by providing access to credit and external development funding and greater access to training, giving them the ability to improve the quality of their coffee.The families of fair trade producers were also more stable than those who were not involved in fair trade, and their children had better access to education.A 2005 study of Bolivian coffee producers concluded that Fairtrade certification has had a positive impact on local coffee prices, economically benefiting all coffee producers, Fairtrade certified or not.

The production and consumption of "Fair Trade Coffee" has grown in recent years as some local and national coffee chains have started to offer fair trade alternatives.

Processing
Roasting

Coffee berries and their seeds undergo several processes before they become the familiar roasted coffee. First, coffee berries are picked, generally by hand. Then, they are sorted by ripeness and color and the flesh of the berry is removed, usually by machine, and the seeds—usually called beans—are fermented to remove the slimy layer of mucilage still present on the bean. When the fermentation is finished, the beans are washed with large quantities of fresh water to remove the fermentation residue, which process generates massive amounts of highly polluted coffee wastewater. Finally the seeds are dried, sorted, and labeled as green coffee beans.

The next step in the process is the roasting of the green coffee. Coffee is usually sold in a roasted state, and all coffee is roasted before it is consumed. It can be sold roasted by the supplier, or it can be home roasted. The roasting process influences the taste of the beverage by changing the coffee bean both physically and chemically. The bean decreases in weight as moisture is lost and increases in volume, causing it to become less dense. The density of the bean also influences the strength of the coffee and requirements for packaging. The actual roasting begins when the temperature inside the bean reaches 200 °C (392 °F), though different varieties of beans differ in moisture and density and therefore roast at different rates. During roasting, caramelization occurs as intense heat breaks down starches in the bean, changing them to simple sugars that begin to brown, changing the color of the bean.Sucrose is rapidly lost during the roasting process and may disappear entirely in darker roasts. During roasting, aromatic oils, acids, and caffeine weaken, changing the flavor; at 205 °C (400 °F), other oils start to develop. One of these oils is caffeol, created at about 200 °C (392 °F), which is largely responsible for coffee's aroma and flavor.

Depending on the color of the roasted beans, they will be labeled as light, medium-light, medium, medium-dark, dark, or very dark. Darker roasts are generally smoother, because they have less fiber content and a more sugary flavor. Lighter roasts have more caffeine, resulting in a slight bitterness, and a stronger flavor from aromatic oils and acids otherwise destroyed by longer roasting times.A small amount of chaff is produced during roasting from the skin left on the bean after processing.Chaff is usually removed from the beans by air movement, though a small amount is added to dark roast coffees to soak up oils on the beans. Decaffeination may also be part of the processing that coffee seeds undergo. Seeds are decaffeinated when they are still green. Many methods can remove caffeine from coffee, but all involve either soaking beans in hot water or steaming them, then using a solvent to dissolve caffeine-containing oils.Decaffeination is often done by processing companies, and the extracted caffeine is usually sold to the pharmaceutical industry.

Storage

Once roasted, coffee beans must be stored properly to preserve the fresh taste of the bean. Ideal conditions are air-tight and cool. Air, moisture, heat and light are the environmental factors in order of importance to preserving flavor in coffee beans.

Folded-over bags, a common way consumers often purchase coffee, is generally not ideal for long-term storage because it allows air to enter. A better package contains a one-way valve, which prevents air from entering.

Preparation

Coffee beans must be ground and brewed in order to create a beverage. Grinding the roasted coffee beans is done at a roastery, in a grocery store, or in the home. They are most commonly ground at a roastery then packaged and sold to the consumer, though "whole bean" coffee can be ground at home. Coffee beans may be ground in several ways. A burr mill uses revolving elements to shear the bean, an electric grinder smashes the beans with blunt blades moving at high speed, and a mortar and pestle crushes the beans.

The type of grind is often named after the brewing method for which it is generally used. Turkish grind is the finest grind, while coffee percolator or French press are the coarsest grind. The most common grinds are between the extremes; a medium grind is used in most common home coffee brewing machines.

Coffee may be brewed by several methods: boiled, steeped, or pressured. Brewing coffee by boiling was the earliest method, and Turkish coffee is an example of this method. It is prepared by powdering the beans with a mortar and pestle, then adding the powder to water and bringing it to a boil in a pot called a cezve or, in Greek, a briki. This produces a strong coffee with a layer of foam on the surface.

Machines such as percolators or automatic coffeemakers brew coffee by gravity. In an automatic coffeemaker, hot water drips onto coffee grounds held in a coffee filter made of paper or perforated metal, allowing the water to seep through the ground coffee while absorbing its oils and essences. Gravity causes the liquid to pass into a carafe or pot while the used coffee grounds are retained in the filter. In a percolator, boiling water is forced into a chamber above a filter by pressure created by boiling. The water then passes downwards through the grounds due to gravity, repeating the process until shut off by an internal timer.

Coffee may also be brewed by steeping in a device such as a French press (also known as a cafetière). Ground coffee and hot water are combined in a coffee press and left to brew for a few minutes. A plunger is then depressed to separate the coffee grounds, which remain at the bottom of the container. Because the coffee grounds are in direct contact with the water, all the coffee oils remain in the beverage, making it stronger and leaving more sediment than in coffee made by an automatic coffee machine.

The espresso method forces hot, but not boiling, pressurized water through ground coffee. As a result of brewing under high pressure (ideally between 9-10 atm) the espresso beverage is more concentrated (as much as 10 to 15 times the amount of coffee to water as gravity brewing methods can produce) and has a more complex physical and chemical constitution. A well prepared espresso has a reddish-brown foam called crema that floats on the surface.The drink "Americano" is popularly thought to have been named after American soldiers in WW II who found the European way of drinking espresso too strong. Baristas would cut the espresso with hot water for them.

Presentation

Once brewed, coffee may be presented in a variety of ways. Drip brewed, percolated, or French-pressed/cafetière coffee may be served with no additives (colloquially known as black) or with either sugar, milk or cream, or both. When served cold, it is called iced coffee.

Espresso-based coffee has a wide variety of possible presentations. In its most basic form, it is served alone as a "shot" or in the more watered down style café américano—a shot or two of espresso with hot water. The Americano should be served with the espresso shots on top of the hot water to preserve the crema. Milk can be added in various forms to espresso: steamed milk makes a cafè latte, equal parts espresso and milk froth make a cappuccino, and a dollop of hot, foamed milk on top creates a caffè macchiato.

A number of products are sold for the convenience of consumers who do not want to prepare their own coffee. Instant coffee is dried into soluble powder or freeze dried into granules that can be quickly dissolved in hot water. Canned coffee has been popular in Asian countries for many years, particularly in Japan and South Korea. Vending machines typically sell varieties of flavored canned coffee, much like brewed or percolated coffee, available both hot and cold. Japanese convenience stores and groceries also have a wide availability of bottled coffee drinks, which are typically lightly sweetened and pre-blended with milk. Bottled coffee drinks are also consumed in the United States. Liquid coffee concentrates are sometimes used in large institutional situations where coffee needs to be produced for thousands of people at the same time. It is described as having a flavor about as good as low-grade robusta coffee and costs about 10 cents a cup to produce. The machines used can process up to 500 cups an hour, or 1,000 if the water is preheated.

Social aspects

Coffee was initially used for spiritual reasons. At least 1,000 years ago, traders brought coffee across the Red Sea into Arabia (modern day Yemen), where Muslim monks began cultivating the shrub in their gardens. At first, the Arabians made wine from the pulp of the fermented coffee berries. This beverage was known as qishr (kisher in modern usage) and was used during religious ceremonies.

Coffee became the substitute beverage in place of wine in spiritual practices where wine was forbidden.Coffee drinking was briefly prohibited to Muslims as haraam in the early years of the 16th century, but this was quickly overturned. Use in religious rites among the Sufi branch of Islam led to coffee's being put on trial in Mecca, accused of being a heretic substance, and its production and consumption was briefly repressed. It was later prohibited in Ottoman Turkey under an edict by the Sultan Murad IV. Coffee, regarded as a Muslim drink, was prohibited to Ethiopian Orthodox Christians until as late as 1889; it is now considered a national drink of Ethiopia for people of all faiths. Its early association in Europe with rebellious political activities led to its banning in England, among other places.

A contemporary example of coffee prohibition can be found in The Church of Jesus Christ of Latter-day Saints, a religion with over 13 million followers worldwide, which calls for coffee abstinence. The organization claims that it is both physically and spiritually unhealthy to consume coffee.This comes from the Mormon doctrine of health, given in 1833 by Mormon founder Joseph Smith, in a revelation called the Word of Wisdom. It does not identify coffee by name, but includes the statement that "hot drinks are not for the belly", which has been interpreted to forbid both coffee and tea.

Health and pharmacology

Coffee ingestion on average is about a third of that of tap water in North America and Europe.Worldwide, 6.7 million metric tons of coffee were produced annually in 1998–2000, and the forecast is a rise to 7 million metric tons annually by 2010.

Scientific studies have examined the relationship between coffee consumption and an array of medical conditions. Findings are contradictory as to whether coffee has any specific health benefits, and results are similarly conflicting regarding negative effects of coffee consumption.

Coffee appears to reduce the risk of Alzheimer's disease, Parkinson's disease, heart disease, diabetes mellitus type 2, cirrhosis of the liver, and gout, but it increases the risk of acid reflux and associated diseases . Some health effects of coffee are due to its caffeine content, as the benefits are only observed in those who drink caffeinated coffee, while others appear to be due to other components.For example, the antioxidants in coffee prevent free radicals from causing cell damage.

Coffee's negative health effects are mostly due to its caffeine content. Research suggests that drinking caffeinated coffee can cause a temporary increase in the stiffening of arterial walls.Excess coffee consumption may lead to a magnesium deficiency or hypomagnesaemia, and may be a risk factor for coronary heart disease. Some studies suggest that it may have a mixed effect on short-term memory, by improving it when the information to be recalled is related to the current train of thought, but making it more difficult to recall unrelated information.About 10% of people with a moderate daily intake (235 mg per day) reported increased depression and anxiety when caffeine was withdrawn,and about 15% of the general population report having stopped caffeine use completely, citing concern about health and unpleasant side effects. Nevertheless, the mainstream view of medical experts is that drinking three 8-ounce (236 ml) cups of coffee per day (considered average or moderate consumption) does not have significant health risks for adults.

An American scientist Yaser Dorri has suggested that the smell of coffee can restore appetite and refresh olfactory receptors. He suggests that people can regain their appetite after cooking by smelling coffee beans, and that this method might also be used for research animals.

Yoon, Eun-Hye (Korean: 윤은혜, Hanja: 尹恩惠, born October 3, 1984) is a South Korean actress, singer, and model. She debuted as a member of the popular girl group Baby V.O.X, staying with the group from 1999 - 2005. She has since moved on to acting, receiving popularity and fame from her role as a crown princess on the drama Princess Hours, also known as "Goong", as well as her role as the main protagonist in the highly successful drama, The 1st Shop of Coffee Prince.

In addition to her acting and singing, Yoon Eun-Hye graduated from Kyung Hee Cyber University in February 2007, receiving a Bachelor's Degree in Business Administration, specializing in Tourism Management.

Baby V.O.X. days

When the girl group Baby V.O.X dropped a member due to a scandal, Yoon Eun-Hye was chosen to replace her. Yoon Eun-Hye was by far the youngest member in the group, debuting at the age of 15. She recorded four albums with the band before leaving the group in July 2005 in order to pursue an acting career. While with the group, Eun-Hye quickly became known as the "cute" one not only for her young age, but because of her bright personality. However, she was also criticized for her weight, as she looked overweight compared to her very slim band mates. Although she debuted a new, skinnier body in early 2005, she appeared to be experiencing a "yoyo" effect, as noted by various Korean netizens.

Eun-Hye suffered in the hands of detractors Baby V.O.X. when she joined the group to produce their third album. In a water gun incident, Baby V.O.X. was scheduled to appear on Gyun-Ahn Broadcasts Music Engine and was waiting inside their van when Eun-Hye was shot by a water gun by an unidentified man. The man pretended to be a passionate fan of the group and attempted to offer a Pikachu doll as a present. Suddenly, he took out a water gun and shot Yoon Eun-Hye right in the eye before fleeing. After being shot, Eun-Hye expressed severe pain and could not open her eyes for a long period of time. Baby V.O.X. had to cancel their performance and Eun-Hye was taken straight to the hospital. There, Eun-Hye was informed that her cornea was damaged. The members of the group claimed they smelled soy sauce and vinegar from the water that came out of the water pistol. No further information regarding this incident was released.

Acting career

Yoon Eun-Hye has played a small role on the sitcom "Nonstop Four", where she had a small role with MC Mong, before moving on to became a regular guest for the variety show X-Man on SBS. While on "X-Man", she became involved in a romantic scandal with popular K-pop singer Kim Jong Kook which received coverage from a local newspaper. Although "X-Man" raised her public profile, she left the show a year later in order to pursue acting. Eun Hye also played Kim Jong Kook's love interest in his music video "Saying You Love Me" which was released in July 2006.

Eun Hye had her first major acting role in popular Korean drama, Princess Hours (also known as Goong). Initially, however, fans of Goong had questioned her acting ability leading to controversy.The success of the drama also appeared unclear as it competed with My Girl which also boasted casting of popular celebrities such as Lee Jun Ki and Lee Dong Wook. The drama began with average ratings, but as it continued, viewership increased to 28.3% nationally, leading to an extension of the first season (from 20 to 24 episodes) and a Princess Hours special on MBC. Although Yoon and the other main actors initially agreed to work on a second season of Princess Hours, only one of them officially agreed to do so. Another director of a different company eventually filmed a spin-off series with brand new characters, known as Goong S which was not to be confused with the actual Goong sequel planned by the original director and company.

Due to the success of her first drama, Eun Hye has been able to continue acting in other dramas such as The Vineyard Man. Like most Korean dramas at that time[citation needed], The Vineyard Man initially suffered from low ratings due to strong competition from the MBC 45th anniversary drama Jumong; however, the drama ratings gradually increased and reached a successful 15.6% on its finale.

Eun Hye returned in the lead actress role for MBC's Monday/Tuesday drama "The 1st Shop of Coffee Prince" that started airing in July 2007. In this drama, Yoon plays an employee 'Go Eun-chan' at a coffee shop, who was once a master of Taekwondo. With her short haircut and tomboyish ways, she is presumed to be a boy by the owner of the shop, thus leading to romantic complications. The 1st Shop of Coffee Prince garnered higher ratings than her first series Princess Hours. Coffee Prince reached the viewership ratings as high as 32.1% in Seoul, making it number one for it's timeslot in MBC and 29.9% nationwide

It has been reported that Eun Hye has been paid 20 million won per episode for starring in Coffee Prince, enabling her to join Korea's A-list of stars who also are members of the 20 million won club. This "club" consists of Bae Yong-joon, Kwon Sang Woo, Ko Hyun Jung, Song Il kook and Yoon Eun Hye, to name a few.

Controversy with management

The chance for Yoon Eun Hye to act in Goong 2, if it is ever produced, seems unlikely because she has feuded with her management company, Eight Peaks which is producing Goong.

Eun Hye, who has gained enormous popularity through her role in "Coffee Prince", had filed the second certification of contents (COC) to cancel her contractual agreement with her management company, Eight Peaks. When asked to reveal the information behind the second COC, Eun Hye's counsel stated, "if Eight Peaks refused to cancel the contract then they would not hesitate to file a lawsuit, suing them for their refusal."

The contents of the first COC stated that in January 2007 Eun Hye was confirmed to be starring in the MBC drama "Que Sera Sera" and had even participated and completed the script reading and rehearsal for the upcoming shoot. However, Eight Peaks had cancelled Eun Hye's involvement in QSS in order for Yoon to star in Eight Peaks' self produced drama.

Consequently, after the cancellation of Eun Hye's QSS involvement, Eun Hye took a two day vacation to Kangwon-do in March. Eight Peaks claimed that they had no knowledge of this so-called incident and spread a rumor of Eun Hye's irresponsibility online which damaged her reputation.

Yoon's manager, Park Geun-Soo has stated "the second COC includes evidence to support the disagreeable actions made by Eight Peaks." Those actions included the improper handling and distribution/division of earnings and proceeds as well as the unilateral (one-sided) manner of making and carrying out decisions which caused immense problems.

It had been reported that, while Eun Hye was enjoying enormous fame and popularity through her role in the "Coffee Prince", she was suffering mental and emotional problems from the conflicts with Eight Peaks.

Yoon has been diagnosed with Pernicious anemia.
